Spinach and bacon mac and cheese.
Cook some bacon by baking in the oven. Use the mac and cheese recipe below.
Instead of making the roux in the microwave, make a white roux on the stove top referring to the video below. Substitute Vermont cheddar cheese for generic shredded sharp cheddar cheese. Substitute American cheese for shredded mild cheddar cheese.
When the sauce is complete, mix in pureed spinach. Chop the bacon and mix into the mac and cheese when done.
